Nuuk is not only about coffee and not a “fast food” place. We aren’t interested in the “fast” side of food. We’re interested in the transformation. In sourdough bread the way the flour, sourdough, salt, and water turn into something structural over 48 hours, or the way a jar of seasonal vegetables develops a sharp, funky life of its own.
